Fluffy Vasilopita (Greek New Year’s Cake)

Ingredients

Preparation:

  1. In a glass bowl, add the OLYMPOS Natural Orange Juice, the orange zest, the eggs, the sunflower oil, and the melted OLYMPOS Cow Milk Butter.
  2. In a food processor, add the 3 tablespoons of sugar, mastic, mahlepi, kakule (cardamom), and vanillins and beat very well.
  3. Add them to the bowl with the liquids, add the remaining sugar, and mix very well with the whisk.
  4. Add the baking powder to the flour, sift, and mix until you have a smooth mixture.
  5. Add the chocolate truffle and mix very well.
  6. In a 26-28 cm round baking pan, after putting parchment paper on the bottom of it, grease it with butter, dust it with flour, and then add the batter.
  7. Beat lightly on the counter to release the air and add a coin.
  8. Bake in a preheated oven for 60-70 minutes at 170-180 °C without fan.
  9. Let it cool for 3 minutes so that you can touch it, then remove it by turning it upside down on a wire rack and let it cool completely.
  10. In a glass bowl we cut the couverture white chocolate into pieces, cover it with plastic wrap, and melt it in a microwave for 1 minute.
  11. Slowly add the sunflower oil, stirring constantly.
  12. Transfer the Vasilopita on the rack to a baking tray so that you can glaze it.
  13. Glaze the Vasilopita by making circular movements and allow it to set.
  14. Place melted couverture inside a piping bag, write the date, and wishes, and decorate with ground pistachio.
  15. Transfer it to a platter and the Vasilopita is ready to decorate your New Year’s table.
