Kourabiedes (Almond Snowballs)

INGREDIENTS
  • 750-800 gr. all-purpose flour
  • 500 gr. Cow butter (at room temperature)
  • 200 gr. icing sugar
  • 100 gr. roasted almonds
  • 4-5 drops of liquid vanilla

TO SPRINKLE

  • Icing sugar

METHOD

 

1. In the mixer’s bowl, add Cow butter (at room temperature), the icing sugar and beat, until you get a fluffy creamy mixture.
2. With a spatula, gather the mixture in the center of the bowl and insert the paddle attachment.
3. Use a multi-cutter to coarsely chop the roasted almonds.
4. Add the liquid vanilla as the mixer is off.
5. Turn the mixer on at low speed and add the all-purpose flour and the chopped almond in batches.
6. Every pieces should weight 25 gr.
7. Shape balls and lightly press the center of each kourabies with your finger.
8. Bake at preheat, fan-assisted oven for 12-15 minutes at 190 oC.
9. Let them cool down and then sprinkle with icing sugar.
