Chocolate Pudding with Tsoureki

INGREDIENTS
  • 500 ml CARPOS Almond Cocoa Protein OLYMPOS
  • 300 g tsoureki (cut into pieces)
  • 80 g sugar
  • 40 g corn flour
  • 2 sachets vanillin
  • 100 g dark chocolate (couverture), finely chopped
  • A pinch of salt
FOR SERVING
  • Finely chopped Aegina pistachios

CARPOS ALMOND PROTEIN WITH COCOA
METHOD
  1. In a saucepan, combine the CARPOS Almond Cocoa Protein OLYMPOS drink, sugar,
    salt, and cornflour. Cook over medium heat, stirring constantly, until the mixture comes to
    a boil and thickens.
  2.  Remove from heat and add the chopped chocolate and vanilla. Stir until the chocolate is
    fully melted and the mixture is smooth. (For a thinner consistency, add a little cold
    CARPOS Almond Cocoa Protein OLYMPOS drink.)
  3. Place pieces of tsoureki into serving glasses or bowls. Pour the warm pudding over the
    top.
  4. Sprinkle with chopped pistachios and refrigerate until set.

Serve chilled and enjoy!
