Healthy and Light Baked Vegetable Dish with Mashed Potatoes

FOR THE MASHED POTATOES
FOR THE VEGETABLES
  • 1 large onion
  • 2 zucchinis (300 g)
  • 2 carrots (150 g)
  • 1 yellow pepper (170 g)
  • 1 red pepper (150 g)
  • 300 g white mushrooms (about 11 mushrooms)
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 1 heaped tbsp mustard
  • Juice of 1 lemon
  • 1 tsp sweet paprika
  • Oregano
  • Salt
  • Pepper
FOR TOPPING
  • Breadcrumbs
  • Olive oil

METHOD
  1. In a pot, boil the whole potatoes until they are soft.
  2. In a pan, heat the olive oil and sauté the onion for 2 minutes.
  3. Add all the remaining vegetables, salt, and pepper, and stir for 1 minute.
  4. Add the paprika, oregano, garlic, mustard, and lemon juice. Cook over medium heat for 15 minutes, until softened.
  5. Turn off the heat, transfer the vegetables to a 25×30 cm baking dish, and spread them evenly.
  6. In a bowl, mash the potatoes very well. Heat them over medium heat, gradually adding the CARPOS Oat Drink OLYMPOS.
  7. Add the olive oil, salt, pepper, and nutmeg, and mix well until smooth and fluffy.
  8. Spread the mashed potatoes evenly over the vegetables and create lines on the surface with a fork.
  9. Sprinkle with breadcrumbs, drizzle with a little olive oil, and bake in a preheated fan oven at 200°C for 20–25 minutes.
