In a saucepan, add the OLYMPOS KARPΟS Unsweetened Almond Drink, sugar, lemon zest, cornflour, semolina, and vanilla. Stir well over heat until it boils and thickens.
Pour the mixture into a 26 cm round baking dish (pyrex) and spread it evenly with a spatula.
In a small bowl, mix the honey with the water and brush it generously over the surface of the pie.
Bake in a preheated fan oven at 160°C for 40–45 minutes, until nicely golden.
Let it cool completely, then cut into pieces and serve.
