Easy Vegan Almond Biscotti!

INGREDIENTS:
400 g all-purpose flour
130 g
KARPOS Almond Drink No Sugar OLYMPOS
120 g sugar
110 g olive oil
Zest of 1 orange
80 g coarsely chopped toasted almonds
50 g black raisins
1/4 tsp baking soda
2 tsp baking powder
Sesame seeds

METHOD
In a bowl, add the
KARPOS Almond Drink No Sugar OLYMPOS
, sugar, olive oil, and orange zest. Mix very well.
Add the chopped almonds, raisins, baking powder and baking soda. Stir to combine.
Gradually add the flour until you get a soft, pliable dough.
Divide the dough in half and shape each portion into a long sticks.
Carefully roll the sticks in sesame seeds and place them on a baking tray lined with parchment paper.
Gently press them down with your hands and score diagonally with a knife, about 1.5 cm apart, without cutting all the way through.
Bake in a preheated conventional oven at 200°C for 30 minutes.
Remove from the oven, cut the biscotti all the way through, turn them cut-side up, place them next to each other, and bake
again for 20 minutes at 160°C until dry and crisp.
Let them cool and enjoy.
