Easy Vegan Almond Biscotti!

INGREDIENTS:
  • 400 g all-purpose flour
  • 130 g KARPOS Almond Drink No Sugar OLYMPOS
  • 120 g sugar
  • 110 g olive oil
  • Zest of 1 orange
  • 80 g coarsely chopped toasted almonds
  • 50 g black raisins
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • Sesame seeds

METHOD
  1. In a bowl, add the KARPOS Almond Drink No Sugar OLYMPOS, sugar, olive oil, and orange zest. Mix very well.
  2. Add the chopped almonds, raisins, baking powder and baking soda. Stir to combine.
  3. Gradually add the flour until you get a soft, pliable dough.
  4. Divide the dough in half and shape each portion into a long sticks.
  5. Carefully roll the sticks in sesame seeds and place them on a baking tray lined with parchment paper.
  6. Gently press them down with your hands and score diagonally with a knife, about 1.5 cm apart, without cutting all the way through.
  7. Bake in a preheated conventional oven at 200°C for 30 minutes.
  8. Remove from the oven, cut the biscotti all the way through, turn them cut-side up, place them next to each other, and bake
  9. again for 20 minutes at 160°C until dry and crisp.
  10. Let them cool and enjoy.
