When making a puree … when do we put the milk, and when the butter? Well, if we put the milk first, it reacts with the starch molecules and makes the texture of the puree like rubber. However, if we put the butter first, the fat molecules cover the starch molecules and when the milk is added its molecules can not react with the starch and thus the texture of the puree becomes velvety.
